Apple and Blueberry Crumble

Nothing screams Sunday more than a fruity crumble for dessert! This recipe is 100% vegan and gluten free (can also be made nut free too), a simple yet perfect, allergen friendly classic.

Ingredients (serves 4)

  • 200g gluten free oats (oats are naturally gluten free, but manufacturing methods can lead to cross contamination, so it’s safest to buy specified gluten free oats)

  • 30g gluten free plain flour

  • 65g soft brown sugar

  • 50g chopped walnuts

  • 65g golden syrup

  • 65g butter (melted)

  • 1 tablespoon of granulated sugar

  • 1 teaspoon ground cinnamon

  • 3 apples - cored, peeled and chopped (Pink Lady’s are my favourite!)

  • 180g blueberries

  • Pinch of salt


Method

  • Preheat the oven to 170 degrees (fan)

  • Lightly grease the baking pan

  • Mix the apples, blueberries, granulated sugar and cinnamon, then place into the baking pan

  • Using a whisk on the lowest setting, mix the oats, flour, brown sugar, walnuts, melted butter, golden syrup and salt until the ingredients are well blended

  • Cover the fruit mixture with the topping

  • Bake for 40-45 minutes (when the crumble is ready the top will turn brown and the fruit will bubble)

  • Serve with some vegan (ice) cream and enjoy!


*Depending on how thick you’d like the top layer, you may be left with some excess crumble topping. I used this to make some granola cups topped with vegan chocolate spread - simply bake in the oven for 20-25 minutes at 170 degrees and top with whatever you fancy!
