Chocolate Cake
This is the ultimate chocolate cake! Perfect for any chocolate lovers who are after a moist, light and fluffy bake with a delightful buttercream icing 🍫
Ingredients
Cake mix
200g caster sugar
200g unsalted butter
4 large eggs
200g self raising flour
2 tablespoons cocoa powder
1 teaspoon baking powder
1 teaspoon vanilla extract
1/2 teaspoon xantham gum
2 tablespoons plant based milk (I use soya)
Icing
100g dairy free chocolate
200g soft unsalted butter
400g icing sugar
5 tablespoons cocoa powder
2 tablespoons plant based milk
Method
Preheat the oven to 170 degrees (fan) and line 2 cake tins
Mix the sugar and butter, then add in the eggs one at a time (whisking between each egg)
Add the vanilla and milk to the wet mix and stir
Sift in the flour and cocoa powder then stir well
Mix in the baking powder and xantham gum
When the cake mix is well combined, divide the mix between the 2 tins
Bake the cakes for 20-25 minutes until fully baked through
Leave the cakes to cool completely before icing
Melt the chocolate and then leave this to cool for 5 minutes
Combine the butter and icing sugar
Sift in the cocoa powder and mix
Add the melted chocolate and milk and stir well
Assemble your cake (you may need to trim the top of one of the cakes to make it flat, in order to sandwich them)
Spread 1/2 - 3/4 of the buttercream icing on top of one cake, then place the other on top
Use the rest of the icing on the top layer and decorate however you’d like
Serve at room temperature, or heated either alone or with some cream/custard/ice cream
