Chocolate Cake

This is the ultimate chocolate cake! Perfect for any chocolate lovers who are after a moist, light and fluffy bake with a delightful buttercream icing 🍫

Ingredients

Cake mix

  • 200g caster sugar

  • 200g unsalted butter

  • 4 large eggs

  • 200g self raising flour

  • 2 tablespoons cocoa powder

  • 1 teaspoon baking powder

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon xantham gum

  • 2 tablespoons plant based milk (I use soya)

Icing

  • 100g dairy free chocolate

  • 200g soft unsalted butter

  • 400g icing sugar

  • 5 tablespoons cocoa powder

  • 2 tablespoons plant based milk

Method

  • Preheat the oven to 170 degrees (fan) and line 2 cake tins

  • Mix the sugar and butter, then add in the eggs one at a time (whisking between each egg)

  • Add the vanilla and milk to the wet mix and stir

  • Sift in the flour and cocoa powder then stir well

  • Mix in the baking powder and xantham gum

  • When the cake mix is well combined, divide the mix between the 2 tins

  • Bake the cakes for 20-25 minutes until fully baked through

  • Leave the cakes to cool completely before icing

  • Melt the chocolate and then leave this to cool for 5 minutes

  • Combine the butter and icing sugar

  • Sift in the cocoa powder and mix

  • Add the melted chocolate and milk and stir well

  • Assemble your cake (you may need to trim the top of one of the cakes to make it flat, in order to sandwich them)

  • Spread 1/2 - 3/4 of the buttercream icing on top of one cake, then place the other on top

  • Use the rest of the icing on the top layer and decorate however you’d like

  • Serve at room temperature, or heated either alone or with some cream/custard/ice cream
