Lemon and Macadamia Muffins
These muffins are delightful! Light, fluffy and zesty - great with yoghurt for breakfast, as an accompaniment to a cup of tea/coffee, dessert or just to snack on whenever 🍋
Ingredients
Muffins
260g plain gluten free flour
220g caster sugar
2 teaspoons baking powder
Zest of 2 lemons
Juice of 2 lemons
150ml dairy free milk
100g dairy free butter (melted)
2 eggs
1 teaspoons vanilla extract
Topping
Juice of 2 lemons
60g icing sugar
Macadamia nuts
Zest of 2 lemons
Extra icing sugar to dust
Method
Preheat the oven to 180 degrees fan
Mix the flour, sugar, baking powder and lemon zest
In a separate bowl, beat the milk, eggs, butter, vanilla extract and lemon juice
Combine the wet ingredients with the dry mix and gently mix
Bake for 13 - 15 minutes until a knife inserted comes out clean
While waiting for the muffins to cool, combine the lemon juice and icing sugar
When the muffins are cool, top with the icing glaze, zest, nuts and dusting of icing sugar
