Lemon and Macadamia Muffins

These muffins are delightful! Light, fluffy and zesty - great with yoghurt for breakfast, as an accompaniment to a cup of tea/coffee, dessert or just to snack on whenever 🍋

Ingredients

Muffins

  • 260g plain gluten free flour

  • 220g caster sugar

  • 2 teaspoons baking powder

  • Zest of 2 lemons

  • Juice of 2 lemons

  • 150ml dairy free milk

  • 100g dairy free butter (melted)

  • 2 eggs

  • 1 teaspoons vanilla extract

Topping

  • Juice of 2 lemons

  • 60g icing sugar

  • Macadamia nuts

  • Zest of 2 lemons

  • Extra icing sugar to dust

Method

  • Preheat the oven to 180 degrees fan

  • Mix the flour, sugar, baking powder and lemon zest

  • In a separate bowl, beat the milk, eggs, butter, vanilla extract and lemon juice

  • Combine the wet ingredients with the dry mix and gently mix

  • Bake for 13 - 15 minutes until a knife inserted comes out clean

  • While waiting for the muffins to cool, combine the lemon juice and icing sugar

  • When the muffins are cool, top with the icing glaze, zest, nuts and dusting of icing sugar
