Quick’n Easy Banana Pancakes
I love the versatility of bananas - they’re a perfect pre or post exercise snack due to their energy boosting qualities, and they also serve as the perfect base for so many bakes! These pancakes are so quick to whip up, and are a lovely healthy way to start your day.
Ingredients (4-6 pancakes)
1 large ripe banana
2 medium eggs (can use an egg substitute to make these vegan)
1 tsp vanilla extract
1 tsp cinnamon
1 tsp oil
1/2 tsp of baking powder
Toppings of choice
Method
Mash the banana in a large bowl with a fork until squished
Stir in the rest of the ingredients to make the batter
Turn the oven onto a low heat
Heat a large frying pan, and brush with oil
Use a ladle to pour your batter into the pan (I usually fit 2 in at a time)
Fry for 2 minutes on a medium heat, and then flip
When the pancakes are ready, transfer them to a dish, cover (so they don’t dry out) and place in the oven to keep warm
Repeat the above steps until you’ve made enough pancakes
Top with your favourite accompaniments (I personally love soya yoghurt, fresh fruit and a drizzle of honey!) and enjoy
