4 Ingredient Cornflake Cakes
These cornflake cakes are super easy to make and require no baking! They’re the perfect summer snack for when you’re craving something light and sweet, and they’re 100% gluten free and vegan!
Ingredients (makes 10)
60g cornflakes of choice (make sure you check the packaging for allergens!)
100g chocolate of choice
50g dairy free butter (I usually use the Pure baking spread)
2 tbsp golden syrup
30g white chocolate for drizzle (optional)
Method
Fill a saucepan a quarter of the way full with water, and place on a low heat
Place a glass bowl in the saucepan - you don’t want the bowl to be touching the water, so you make sure your glass bowl is shallow enough! Place the dark chocolate and butter in here and melt together
Place the cornflakes in a large mixing bowl
When the chocolate and butter have melted into a mixture, pour into the bowl and coat the cornflakes
Place into the cupcake holders and put in the fridge for 1 hour
When there’s around 5 minutes left on the cakes, melt the white chocolate using the same method described above for the dark chocolate
Remove the cakes from the fridge and drizzle with the white chocolate to finish
