Lemon and Lime Drizzle Cake
This cake is a twist on the traditional lemon drizzle cake. It uses a combination of lemon and lime juice for an ultra zesty, light and fresh bake! It’s perfect for citrus lovers and has a bit of zing to it. Tastes fab served on it’s own or warm with some soya cream 🍋
Ingredients
Cake mix
220g gluten free self raising flour
225g dairy free butter
195g caster sugar
4 eggs
Grated zest of 1 lemon
Grated zest of 1 lime
Juice of 1 lemon
Juice of half a lime
Drizzle
140g granulated sugar
Juice of 1 lemon
Juice of half a lime
Topping
Zest of 1 lime for decoration
Method
Take your butter out of the fridge and let it reach room temperature (around 20-30 minutes)
Preheat the oven to 180 degrees (fan)
Whisk the butter and sugar together
Add the eggs one at a time and slowly whisk
Fold in the flour
Mix in the lemon and lime zest + juice
Bake for 35-40 minutes (you may need to cover the top with foil during the last 10 minutes to avoid the top burning)
