Lemon and Lime Drizzle Cake

This cake is a twist on the traditional lemon drizzle cake. It uses a combination of lemon and lime juice for an ultra zesty, light and fresh bake! It’s perfect for citrus lovers and has a bit of zing to it. Tastes fab served on it’s own or warm with some soya cream 🍋

Ingredients

Cake mix

  • 220g gluten free self raising flour

  • 225g dairy free butter

  • 195g caster sugar

  • 4 eggs

  • Grated zest of 1 lemon

  • Grated zest of 1 lime

  • Juice of 1 lemon

  • Juice of half a lime

Drizzle

  • 140g granulated sugar

  • Juice of 1 lemon

  • Juice of half a lime

Topping

  • Zest of 1 lime for decoration

Method

  • Take your butter out of the fridge and let it reach room temperature (around 20-30 minutes)

  • Preheat the oven to 180 degrees (fan)

  • Whisk the butter and sugar together

  • Add the eggs one at a time and slowly whisk

  • Fold in the flour

  • Mix in the lemon and lime zest + juice

  • Bake for 35-40 minutes (you may need to cover the top with foil during the last 10 minutes to avoid the top burning)
