Marble Loaf Cake
This marble cake is super quick and easy to make. The mixture of the colours is so aesthetically pleasing and gives it a magical finish! 100% dairy free and gluten free of course - can be made vegan using an egg substitute 💫
Ingredients
200g dairy free butter
200g caster sugar
200g gluten free self raising flour
4 eggs
2 tsp vanilla
1/2 teaspoon xanthan gum
1/4 teaspoon salt
3 tablespoons of dairy free milk
2 tablespoons cocoa powder
Method
Preheat the oven to 180 degrees fan
Whisk the butter and sugar together
Add the eggs to the mixture 1 at a time, whisking after each addition
Sift in the flour, salt and xanthan gum
Add 2 tablespoons of milk, then whisk the mixture
Place half the mixture in a separate bowl - mix in the cocoa powder and 1 tablespoon of milk
Line a loaf tin with baking paper
Layer your cake mixture - put half of the vanilla mix in to cover the length of the tin, and then a layer of chocolate on top. Draw some swirls into the mix using a thin, sharp instrument
Repeat the above with the remaining cake mix
Bake for 40 minutes (or until a skewer inserted comes out clean)
